Certified Organic Winter Squash varieties grown in Skagit Valley, WA

All squash aren't created equal

From classic butternut to heirloom varieties like Baby Blue Hubbard (the squash used to make the first pumpkin pie), every certified Organic Winter Squash we grow is cultivated in Skagit Valley’s nutrient-rich soil using sustainable farming practices. One taste of our squash and you’ll get why we’ve been growing it right for over 25 years.

Squash, Three Ways

Each squash variety is locally grown, harvested at peak ripeness, and perfect for cozy autumn meals or holiday feasts.

  • Organic Delicata Squash

Known for its tender, edible skin and signature green stripes, this oblong squash offers a naturally sweet, nutty flavor. Roast in slices or halves, season with savory spices, and enjoy as a simple side dish or festive centerpiece.

  • Organic Spaghetti Squash

Famous for its pasta-like strands, this versatile squash is a low-carb alternative to spaghetti. Roast or microwave, then scrape into tender, golden “noodles” that are perfect for pairing with marinara, pesto, or butter and herbs.

  • Organic Acorn Squash

A fall classic with deep ridges and rich, buttery flesh. Ideal for baking, stuffing, or enjoying with a drizzle of maple syrup or a sprinkle of cinnamon sugar.

Squash Goals: How to Get The Most of Your Winter Squash

Storage: Store your winter squash in a cool, dry place (50–60°F) for up to several months after purchasing. When you’re looking for the right one, choose the squash with no soft spots or blemishes to ensure the best storage life.

Cooking Hacks: Pierce the squash with a fork and microwave for a couple of minutes to make cutting easier. Drizzle with olive oil and your favorite herbs before roasting for maximum flavor. Don’t forget to save the seeds to roast for a delicious (and nutritious) snack!

Substitutions: Most winter squash varieties can be substituted for one another in recipes, though flavors and textures may vary slightly. Just be sure to adjust your cooking times accordingly based on any substitutions you make.
