Italian Inspired Delicata Squash Hash Recipe

 

I do not know about you, but I am constantly looking for new and inventive ways to eat healthy. 

I love colorful, flavorful food--- that is easy to make, with minimum clean up. This Italian Inspired Delicata Hash is just that! I used a cutting board, some utensils, a baking sheet and one big pot to do all of the work!

Ingredients:

2 Small Delicata Squash

1 LB Ground Turkey, seasoned with Oregano, Parsley and Fennel

3 oz Sundried Tomatoes

4 oz Grape Tomatoes

4 oz Sliced Mushrooms

1 Zucchini

6 oz of Shredded Kale

2 oz of Diced Chives

2 Roma Tomatoes, sliced Julienne Style

1 Large Red Onion

Flavor Additives: Salt, Pepper, Red Wine Vinegar, Crushed Red Peppers, Parmesan Cheese

I started off by prebaking the Delicata to make it easier to slice into medallions. I personally love the presentation of medallions, especially when leaving the skin on! The colors, vibrancy and shape really jump off the plate!

Next, I put ground turkey in  a large pot and added my Italian Seasonings. I let that cook and start to prep my veggies. Do not ever feel like you have to make the whole meal from scratch- there are a lot of Value Added Products that could save you time! I generally buy already shredded Kale, and sometimes buy mushrooms that are pre-sliced. There are even more options in the aisle of you grocery store- just take a look!

Before adding the veggies to the ground turkey, I take the delicata out of the oven and let it cool. 

I begin adding the veggies to the pot of seasoned ground turkey, and for this recipe, I add the large red onion last. I want the red onion to hold its integrity and color. 

I add salt, pepper and red wine vinegar to the mix. 

Then slice the delicata with ease into medallions, and remove the seeds from the middle. If the delicata is not cooked through all the way, put the delicata on a baking sheet and put it back in the oven. If you are in hurry, turn the oven on broil, it should speed up the process. 

When everything is finished, I plate the dish. I tossed my hash in parmesan cheese, and some red chili flakes to finish! Garnish with chives, salt and pepper:) Enjoy!
